- 4 c. (about 2 1/2 cans) garbanzos chickpeas, drained
- 1 c. tahini (sesame paste)
- 1/3 c. warm water
- 1/3 c. best quality olive oil
- 1 1/2 tsp. salt
- 2 Tbsp. ground cumin seed
- 4 or more garlic cloves
- freshly ground black pepper to taste
- juice of 2 to 3 lemons
Directions

1Combine chickpeas, warm water, olive oil and juice of 1 lemon in the bowl of food processor with a steel blade.

2Process until smooth and creamy.

3Pause once or twice to scrape sides of bowl. Add garlic, salt, cumin seed and pepper to taste and process to blend.

4Taste and correct seasonings.

5Add more lemon juice to taste.

6Scrape into a storage container.

7Cover and refrigerate.
