  • 1 cup butter (room temperature)
  • 2-1/2 cup sugar
  • 5 eggs (separated at room temperature)
  • 3 cups cake flour
  • 5 tbsp. strong coffee
  • 1 tsp. baking soda
  • 1-1/3 tbsp. cocoa
  • 1 cup buttermilk
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 2 boxes confectioners' sugar
  • 6 tbsp. strong coffee
  • 2 sticks butter (softened)
  • 2 tsp. vanilla
  • 1-1/3 tbsp. cocoa

Directions

    Cream butter and sugar.

    Add egg yolks one at a time.

    Sift dry ingredients together.

    Mix cocoa with buttermilk.

    Add dry ingredients and liquid to batter alternately.

    Add vanilla and fold in beaten egg whites that have been beaten until stiff but not dry.

    Bake in 3 layers for 40 minutes at 350F.

    Frosting: Add all ingredients and beat until creamy.

    Spread on cake.

    If the frosting looks too thick add coffee, if too thin add more confectioners' sugar.
