- 4 slices bacon, cut into 1-inch pieces
- 1 medium onion, sliced
- 2 to 2 1/2 lb. fryer
- salt and pepper to suit
- 1 (16 oz.) can tomatoes, cut into bite size pieces
- 1/2 c. Heinz 57 sauce
- 1 Tbsp. sugar
- hot buttered rice
Directions

1Saute bacon in large skillet until partially cooked, then saute onion in same skillet until onion is tender.

2Remove bacon and onion; set aside.

3Drain drippings from skillet, reserving 2 tablespoons.

4Brown chicken in remaining drippings, sprinkle lightly with salt and pepper.

5Drain excess fat.

6Combine cooked bacon, onion, tomatoes, 57 sauce and sugar. Pour over chicken. Cover, simmer 40 to 45 minutes or until chicken is tender, basting occasionally.

7Thicken sauce with flour/water mixture, if desired. Serve over rice.

8Makes 4 to 5 servings.
