  • 2 - 2 1/2 lbs apples (mixture of sweet and tart cooking apples)
  • 1/4 cup turbinado (aka sugar in the raw) or brown sugar
  • 2 tbsp tapioca flour
  • 2 tbsp apple butter
  • 1 1/2 tsp lemon or lime juice
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp grains of paradise/cardamom/black pepper, freshly ground (you can mix or use whichever you happen to have)
  • Streusel topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup rolled oats
  • 3 tbsp packed light-brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter, room temperature
