Ingredients
- 5 teaspoons olive oil
- 1/2 cup chopped red pepper
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 2 ounces cooked ham, chopped (may use bacon if you wish)
- 1/2 cup dry sherry
- 1/4 cup chopped parsley
- 2 tablespoons fresh squeezed lemon juice
- 1/4 teaspoon thyme
- 1/8 teaspoon cayenne pepper
- 3/4 cup plain breadcrumbs
- 1 lb raw shrimp, peeled
Directions

1Preheat oven to 400 degrees.

2Saute the red peppers, onion and garlic in 1 tablespoon olive oil until the vegetables are softened.

3Add the remaining ingredients including breadcrumbs, except the last teaspoon of olive oil and saute for a few minutes, until shrimp just begins to turn opaque.

4Put into a casserole and drizzle with remaining teaspoon of olive oil.

5Bake for 10-15 minutes until shrimp is just cooked through.
