Ice Cream Cake Roll

Ingredients

  • 4 eggs, well beaten
  • 1 c. sugar
  • 1 tsp. vanilla
  • 1 c. self-rising flour
  • vanilla ice cream (or any flavor)
  • whipped topping
  • powdered sugar

Directions

    Beat eggs.

    Add sugar, flour and vanilla; mix well.

    Grease a cookie sheet with sides.

    Cut wax paper to fit bottom of pan; grease top of wax paper.

    Place paper in pan and pour batter in pan.

    Bake at 350° for 10 minutes or until brown.

    Turn out on a towel that has been dusted with powdered sugar.

    Roll up jelly roll shape.

    Let cool.

    Unroll and cover with ice cream.

    Roll cake back up and put in freezer to chill.

    Then cover with whipped topping and return to freezer until ready to serve.

    Garnish with fresh fruit, if desired.
