Ingredients
- 500 grams strong white flour
- 50 grams caster sugar
- 40 grams unsalted butter
- 2 eggs
- 14 grams instant yeast
- 2 tsp salt
- 150 ml warm milk
- 140 ml water
Directions

1Mix dry ingredients together in a bowl, add butter and rub through fingers, add eggs and warm milk.

2Add half water and kneed together, add extra part of water if needed.

3Shake some flour onto work surface and remove the dough from bowl.

4Kneed well for 10 mins.

5Place into a clean bowl and cover with a warm damp cloth and leave for 1 hour to rise.

6Greese 3 baking trays, remove dough and roll out 20 iced fingers.

7Leave on baking trays for 40 mins, your fingers should almost double in size.

8Bake on 150 for 10-15 mins, your oven my vary.

9Mine is very hot.

10Leave to cool.

11Cut in half when cold, fill with jam and whipped cream, or a filling if your choice.

12Use icing sugar on top and writing icing to decorate.
