Iced Pecan Cookies

Ingredients

  • 1 c. butter or oleo
  • 1 c. sugar
  • 1/4 c. brown sugar
  • 2 egg yolks (save whites)
  • 1 tsp. vanilla
  • 2 c. flour
  • 1/4 tsp. salt
  • 2 c. pecans, shelled and crushed

Directions

    Cream butter, sugars and eggs; add vanilla and mix well.

    Add flour and salt.

    Refrigerate dough until chilled.

    Roll dough into balls the size of walnuts.

    Dip the balls in egg whites and roll in the crushed pecans.

    Place on a greased cookie sheet and smash center of ball with thumb, leaving a bowl shape.

    Bake at 350° for 10 to 12 minutes.

    The cooled cookies can be iced with a favorite icing or filled with fruit jam.
