- 1/2 cup Bisquick
- 1 cup evaporated milk
- 1/2 cup sugar
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 2 eggs
- 8 1/4 ounces apricots, halves drained and mashed
- 1/4 cup apricot preserves
Directions

1Heat oven to 350 degrees.

2Spray a 9 inch pie plate with cooking spray.

3Stir together all ingredients except apricot preserves until well blended.

4Pour into pie plate.

5Bake for 35-40 minutes or until knife inserted into center of pie comes out clean.

6Cool completely for at least 1 hour.

7In a small saucepan heat apricot preserves until melted.

8Spread over pie.

9Cool.

10Garnish with cool whip or whipped cream.
