- 1/2 c. sugar
- 1/2 c. Bisquick
- 1/2 c. egg substitute
- 2 (8 oz.) pkg. light cream cheese or Neufchatel cheese, cut into 1-inch cubes and softened
- 2 tsp. vanilla
- 1/2 tsp. grated lemon peel
- cheesecake topping
Directions

1Heat oven to 350°.

2Grease a 9 x 1 1/4-inch pie plate lightly. Place all ingredients except topping in mixing bowl.

3Mix on medium/high speed until smooth (2 minutes).

4Pour into pie plate. Bake just until puffed and center is dry, about 30 minutes.

5Do not overbake.
