  • 1 1/2 c. coconut
  • 1 tall can evaporated milk
  • 1/3 c. water
  • 4 eggs
  • 1 1/8 c. sugar
  • 1/2 c. flour
  • 1/2 tsp. cream of tartar
  • 1/4 c. butter, softened
  • 1 tsp. vanilla
  • pinch of salt

Directions

    Butter the bottom of a 10-inch glass pie pan.

    Spread flaked coconut in pan.
  3. 3
    Place all other ingredients in blender; blend well on high speed.

    Carefully pour over coconut and make sure all coconut is moistened.

    Bake at 350° for approximately 40 minutes, or until lightly browned and set like a custard.

    Makes its own crust.
