  • 1 1/2 lb chicken thighs, boneless skinless
  • 1/4 tsp salt
  • 1 large onion. sliced
  • 1/2 cup green bell pepper, chopped
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp butter
  • 1 1/2 cup sliced okra
  • 1 large egg
  • 2 tbsp baking powder
  • 1/4 cup grated parmesan cheese
  • 1/2 cup crushed pecans
  • 1 tbsp parsley

    Marinate the chicken thighs in pickle juice overnight

    Preheat oven 425 Fahrenheit

    Take chicken out of pickle juice, salt and discard the juice.

    Mix the baking powder, egg, parmesan cheese, parsley, and pecans.

    In a medium bowl

    Dip chicken into batter coat well put on an oven safe pan bake 30 minutes.

    In a pan melt butter add, okra, onions, peppers, salt, and ground black pepper.
