- 2 tablespoons olive oil
- 12 onion, chopped
- 1 (8 ounce) can tomato sauce
- 2 teaspoons coriander
- 1 12 teaspoons cumin
- 1 12 teaspoons garam masala
- 12 teaspoon cayenne
- 0.5 (8 ounce) bag dry lentils
- 3 cups water
- 0.5 (8 ounce) can coconut milk
Directions

1Saute onion in olive oil until golden brown.

2Add tomato sauce through lentils and 1 cup of water.

3Turn heat to medium low and cover.

4Cook about 15 minutes or until water is mostly absorbed.

5Add 1 cup water, cover, and cook another 15 minutes.

6Repeat Step 4 if necessary.

7Stir in coconut milk and simmer for 5 minutes.

8Serve over rice.
