  • 2 tablespoons olive oil
  • 12 onion, chopped
  • 1 (8 ounce) can tomato sauce
  • 2 teaspoons coriander
  • 1 12 teaspoons cumin
  • 1 12 teaspoons garam masala
  • 12 teaspoon cayenne
  • 0.5 (8 ounce) bag dry lentils
  • 3 cups water
  • 0.5 (8 ounce) can coconut milk

Directions

    Saute onion in olive oil until golden brown.

    Add tomato sauce through lentils and 1 cup of water.

    Turn heat to medium low and cover.

    Cook about 15 minutes or until water is mostly absorbed.

    Add 1 cup water, cover, and cook another 15 minutes.

    Repeat Step 4 if necessary.

    Stir in coconut milk and simmer for 5 minutes.

    Serve over rice.
