Indian Mango Salad

Ingredients

  • 1 mango small lrg ripe, peeled and cut into dice
  • 1 tablespoon vegetable oil
  • 1 red chilli small hot, seeded and finely chopped
  • 1 piece ginger peeled and grated
  • 1 teaspoon black mustard seeds
  • zest grated, a lime
  • 1 cup yoghurt natural

Directions

    Put the mango and any juice into a small bowl.
  2. 2
    Warm the oil in a frying pan and cook the chilli ginger and mustard seeds until the seeds start to pop.

    Add the lime zest and remove from the heat.
  4. 4
    Stir gently into the chopped mango and set aside.

    When cool mix with the yoghurt and season with salt.
