Ingredients

  • 4 Japanese eggplant, sliced
  • 1 bell pepper, sliced
  • 1 large onion, cut into 8 wedges
  • 1/4 cup olive oil
  • 2 Tbs. lemon juice
  • 2 tsp. garam masala
  • 2 cloves garlic, minced (2 tsp.)
  • 1 1/2 tsp. ground cumin
  • 1/2 tsp. grated fresh ginger
  • 4 green onions, finely chopped
  • 1 large tomato, finely diced
  • 1 cup plain low-fat yogurt
  • 1/2 cup chopped fresh mint
  • 1/4 tsp. grated fresh ginger

    To make Vegetables: Toss together all ingredients in bowl.

    Season with salt, if desired.

    Let stand 15 minutes.

    To make Raita: Stir together all ingredients in medium bowl.

    Preheat grill or grill pan over medium heat.

    Grill bell peppers 8 minutes, onion 6 minutes, and eggplant 5 minutes.
