Ingredients

  • 1 qt. milk
  • 2 Tbsp. butter
  • 1/2 c. cornmeal
  • 3 eggs
  • 1/2 c. sugar
  • 1 Tbsp. cinnamon
  • 1 1/2 tsp. ginger
  • 1 tsp. salt
  • 1 c. molasses

Directions

    Bring milk to a boil. Add cornmeal.

    Stir constantly until smooth and slightly thickened. Remove from stove. Add eggs, sugar, salt, cinnamon, ginger and molasses.

    Mix well.

    Put into baking dish about 2-inches deep. Cover with wax paper.

    Bake approximately 1 hour at 400° in a pan of water or until wax paper can be lifted without paper sticking.

    Serve hot with vanilla ice cream.
