  • 3 c. milk
  • 2/3 c. dark molasses
  • 2/3 c. yellow corn meal
  • 1/3 c. sugar
  • 1 tsp. salt
  • 3/4 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1/4 c. butter or margarine
  • 1 c. milk

    Heat oven to 300°.

    Grease 2-quart casserole.

    Heat 3 cups of milk and the molasses.

    Mix corn meal, sugar, salt, cinnamon and nutmeg.

    Gradually stir in hot milk mixture.

    Add butter.

    Cook over low heat, stirring constantly, about 10 minutes or until thickened.

    Pour into casserole.

    Pour 1 cup of milk over pudding; do not stir.

    Bake 3 hours.

    If desired, serve with cream, ice cream or whipped cream.
