- 4 c. milk
- 1 c. maple syrup
- 1/4 c. butter
- 2/3 c. cornmeal
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1 1/2 c. dried currants or raisins
- ice cream (optional)
Directions

1Combine 3 cups milk and maple syrup in saucepan and place over medium heat.

2Heat until just boiling.

3Add butter.

4Combine cornmeal, ginger and nutmeg in separate bowl.

5Gradually stir cornmeal mixture into hot milk.

6Reduce heat to low and cook until thickened, about 10 minutes.

7Fold in currants.

8Spoon mixture into buttered 2-quart casserole.

9Pour remaining 1 cup milk over pudding.

10Do not stir.
-
11Bake at 300° for 2 1/2 hours or until all the milk has been absorbed and top is golden brown.

12Top with ice cream.
