- inner shucks from 1 doz. ears fresh corn
- 2 c. corn meal
- 1/2 tsp. salt
- 1 tsp. baking powder
- boiling water
Directions

1Shuck and clean ears of roasting corn.

2Boil on the cob about 10 minutes.

3Whole ears of corn may then be packed into a clean crock, or cut from the ear.

4Add a solution of salted water or sprinkle salt over corn in layers, then add water.

5When corn is pickled, it may be eaten from the cob or cut off and fried in butter or other fat.
