Indian Vegetable Fried Rice

- 2 cups Basmati Rice, You Can Use Any Rice Of Your Choice
- 3 cups Water
- 1 teaspoon Butter
- 2 Tablespoons Olive Oil
- 2 leaves Bay Leaf
- 4 whole Green Cardamom Crushed
- 3 whole Cloves Crushed
- 1 teaspoon Cumin Powder
- 2 teaspoons Red Chili Powder
- 1/2 cups Onion Cut Into Thick Slices
- 1/2 cups Red Bell Peppers Cut Into Thick Slice
- 1/2 cups Cauliflower, Cut Into Small Florets
- 1/4 cups Carrots, Cut Into Thick Slices
- 1/4 cups Green Peas Can Use Fresh Or Frozen Peas
- 1 Tablespoon Whole Black Pepper
- 2 teaspoons Salt, Or Add As Per Taste
Directions

1Into a large pot, add rice and water and bring to a boil on high heat.

2After 4-5 minutes, reduce heat, add ghee/butter, cover the pot with a lid and let it cook on low heat for 10 minutes.

3After 10 minutes, test a few grains of rice.

4They should be almost cooked.

5Now remove the pot from the heat and drain water off of the rice.

6You can do this using a sieve if you like.

7Keep aside.

8Heat 2 tablespoons of oil in a large nonstick pot on medium heat.

9Add all the spices and saute for 1-2 minutes.

10Now add all the cut vegetables and saute on medium heat for 3-4 minutes (to let vegetables cook a little).

11Take 1/2 of the cooked rice and mix into the sauteed vegetables, stir for 1 minute.

12Now add the remaining rice to the above and saute everything together making sure vegetables and rice are mixed together.

13Saute on high heat for 2-3 minutes, thoroughly mixing everything together and then switch off the heat.

14Add salt and pepper plus more to taste.

15Remove bay leaves.

16Serve hot.
