- 2 sticks margarine (1/2 lb.)
- 1 1/2 c. sugar
- 7 eggs
- 2 1/2 c. flour (all-purpose plain)
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 tsp. lemon (optional)
- 1 tsp. almond (optional)
- 1 c. sherry
- 1 lb. candied chopped pineapple
- 1 lb. chopped cherries
- 1/2 lb. dates
- 2 c. chopped nuts
Directions

1Cream butter and sugar together.

2Add eggs (one at a time) and beat well.

3Sift flour, salt and baking powder.

4Add flour mixture and sherry alternately (very small amounts of sherry at a time).

5Save 3/4 cup of flour to coat fruit and nuts.

6Add fruit and nuts last.

7Bake in small muffin tins, greased and floured or use paper cups.

8Fill tins or cups 3/4 full and bake in a 275° oven for 30 to 45 minutes.

9Drop a few drops of sherry on each cake while hot.

10Makes 6 dozen.
