Ingredients

  • 2 sticks margarine (1/2 lb.)
  • 1 1/2 c. sugar
  • 7 eggs
  • 2 1/2 c. flour (all-purpose plain)
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. lemon (optional)
  • 1 tsp. almond (optional)
  • 1 c. sherry
  • 1 lb. candied chopped pineapple
  • 1 lb. chopped cherries
  • 1/2 lb. dates
  • 2 c. chopped nuts

Directions

    Cream butter and sugar together.

    Add eggs (one at a time) and beat well.

    Sift flour, salt and baking powder.

    Add flour mixture and sherry alternately (very small amounts of sherry at a time).

    Save 3/4 cup of flour to coat fruit and nuts.

    Add fruit and nuts last.

    Bake in small muffin tins, greased and floured or use paper cups.

    Fill tins or cups 3/4 full and bake in a 275° oven for 30 to 45 minutes.

    Drop a few drops of sherry on each cake while hot.
