- 1 (9-inch) pie crust, baked
- 1 (3 oz.) pkg. instant French vanilla pudding
- 1 c. milk
- 1 pt. sour cream
- 3 ripe peaches, peeled and sliced
- 1/4 tsp. almond extract
- 1/4 c. apricot preserves
- 2 Tbsp. water
Directions

1Combine pudding mix, milk, sour cream and almond extract in bowl.

2Beat 1 minute with wire whisk.

3Pour into pie shell.

4Let sit until filling is set.

5Arrange peach slices on top of pie.

6In a small saucepan, heat preserves and water; stirring until mixture begins to bubble.

7Cool slightly and spoon over peaches. Refrigerate.

8Serve with whipped cream, if desired.
