Ingredients

  • 2 Sweet Onions Cut Into Half Inch Rounds
  • 3 cups Imperial Pale Ale Beer, Divided
  • 2 teaspoons Cider Vinegar
  • 1 teaspoon Salt, Divided
  • 1 teaspoon Black Pepper, Divided
  • 3/4 cups Flour
  • 3/4 cups Cornstarch
  • 1 teaspoon Baking Powder
  • 2 quarts Vegetable Oil, For Frying

Directions

  1. 1
Marinate onions for 1 hour in 2 cups of beer, vinegar, 1/4 teaspoon of salt and 1/2 teaspoon of pepper.
  2. 2
Heat oil in heavy-bottomed pot until it reaches 365 degrees F. If you do not have a thermometer, test oil temperature by dropping a small amount of batter into it; if batter fries up quickly, oil is ready.
  3. 3
Whisk flour, cornstarch, baking powder, remaining beer, salt and pepper together to make batter.
  4. 4
Remove onions from marinade and dry thoroughly (batter will not stick well to wet onions).
  5. 5
Coat each onion in batter and drop into hot oil.
  6. 6
Cook 12 minutes, flip over and cook other side for 30 seconds.
  7. 7
You will know rings are ready by their color: they should appear golden brown.
  8. 8
Immediately salt onion rings after removing from pot.
  9. 9
Allow oil to heat back up and continue until all rings are fried.
