Irish Soda Bread

Ingredients

  • 4 c. flour (white or whole wheat or 2 c. each)
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. baking powder
  • 1/4 c. sugar
  • 1/4 c. butter
  • 1 3/4 c. buttermilk
  • 1 egg

Directions

    Combine dry ingredients in large bowl.

    Cut in butter until crumbly.

    Beat egg slightly and mix with buttermilk.

    Add to dry ingredients and stir until blended.

    Turn out onto floured board and knead until smooth (2 or 3 minutes).

    Divide in half and form into 2 round loaves.

    Cut a cross, 1/2-inch deep, in top of each round loaf.

    Bake on greased cookie sheet 40 to 45 minutes.

    Cool before removing from cookie sheet.
