  • 1 lb lean lamb, cubed
  • 2 medium onions, sliced thinly
  • 2 lbs potatoes, sliced
  • salt & freshly ground black pepper, to taste
  • 1 tsp.dried thyme
  • 10 ounces lamb stock
  • chopped fresh parsley

Directions

    Preheat oven to 350F

    Put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato.

    Pour lamb stock over top.

    Cover and cook for about 2 1/2 hours.

    Serve, sprinkled with parsley.
