- 5 c. flour
- 1/2 c. sugar
- 2 tsp. salt
- 2 Tbsp. baking powder
- 2 tsp. baking soda
- 1 c. raisins
- 1 to 2 Tbsp. caraway seed (optional)
- 1 egg, slightly beaten
- 2 c. buttermilk
- grated lemon rind or grated orange rind (optional)
Directions

1Mix the first 5 ingredients.

2Cut in the butter until mixture resembles coarse cornmeal.

3Add raisins, caraway seed and rind. Stir in the egg and buttermilk just to moisten.

4Turn on a well floured surface and knead 8 to 10 times.

5Roll out to 1/2-inch thickness.

6With a biscuit cutter or inverted glass rim, cut out biscuits.
