- 1/2 c. all-purpose flour
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. paprika
- 1 beaten egg
- 2 Tbsp. milk
- 2 to 3 lb. frying chicken, cut in pieces
- Crisco oil or solid Crisco
Directions

1Mix together flour, salt, pepper and paprika.

2Mix beaten egg and milk.

3Coat chicken with seasoned flour.

4Dip in beaten egg and coat again with seasoned flour.

5Melt Crisco into a 12-inch skillet over medium heat, until 1/4-inch depth is reached.

6Cook chicken over medium heat.

7Cover skillet tightly and simmer, turning once or twice, until the thickest pieces are done, 30 to 40 minutes.

8Remove cover during the last 5 minutes of cooking to crisp chicken.
