  • 12 cup pineapple jam
  • 2 tablespoons lemon juice
  • 1 tablespoon canola oil
  • 2 teaspoons soy sauce
  • 2 teaspoons minced fresh ginger
  • 1 14 lbs chicken breasts, boneless and skinless (cut in 1 inch pieces)
  • 1 green bell pepper, cut in 1 inch pieces
  • 1 white onion, cut in 8 wedges
  • 1 lb fresh pineapple chunk
  • salt and pepper

Directions

    Prepare hot grill or preheat broiler.

    Melt jam in microwave for 30-60 seconds or until hot.

    Stir in lemon juice, oil, soy sauce and ginger until well blended.

    In 4 skewers, alternate pieces of chicken, bell pepper, white onion and pineapple chunks.

    Season lightly with salt and pepper and brush generously with pineapple sauce.

    Place on hot grill and cook until chicken is browned and cooked through, 8-10 minutes.
