- 1 cup soy sauce
- 12 cup olive oil
- 12 cup balsamic vinegar
- 2 tablespoons fish sauce
- 14 cup lemon juice
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 2 lbs chicken breasts or 2 lbs beef chuck, cut in 1 inch cubes
- 2 medium onions, cut in quarters
- 1 green mango, cut into chunks
- 1 green squash or 1 yellow squash, cut into chunks
- 1 cup fresh whole mushroom, cleaned
- 1 red bell pepper, cut into chunks
Directions

1Soak skewers in water for 20 minutes before grilling (to prevent burning during grilling).

2Combine first ten ingredients in a container with a lid.

3Combine well.

4Add meat cubes and vegetables.

5Gently stir to distribute the marinade over all.

6Cover and refrigerate at least 2 hours.

7Place meat and vegetables on skewers, brush with marinade and broil over hot coals 15 minutes or until cooked.

8Turn skewers and brush with marinade during the cooking process.

9Serve over seasoned rice.
