Ingredients

  • 1 cup soy sauce
  • 12 cup olive oil
  • 12 cup balsamic vinegar
  • 2 tablespoons fish sauce
  • 14 cup lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 lbs chicken breasts or 2 lbs beef chuck, cut in 1 inch cubes
  • 2 medium onions, cut in quarters
  • 1 green mango, cut into chunks
  • 1 green squash or 1 yellow squash, cut into chunks
  • 1 cup fresh whole mushroom, cleaned
  • 1 red bell pepper, cut into chunks

    Soak skewers in water for 20 minutes before grilling (to prevent burning during grilling).

    Combine first ten ingredients in a container with a lid.

    Combine well.

    Add meat cubes and vegetables.

    Gently stir to distribute the marinade over all.

    Cover and refrigerate at least 2 hours.

    Place meat and vegetables on skewers, brush with marinade and broil over hot coals 15 minutes or until cooked.
