  • 1 cup uncooked long-grain rice
  • 12 cup chopped dried pineapple
  • 2 teaspoons butter
  • 12 teaspoon grated lime rind
  • 14 teaspoon salt
  • 14 cup chopped fresh cilantro
  • 1 tablespoon chopped green onion
  • 2 12 tablespoons fresh lime juice

Directions

    Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt).

    Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
