- 4 chicken breasts or 1 cut up chicken
- 1 c. flour
- 1 tsp. salt
- 1 tsp. paprika
- 1/8 tsp. pepper
- 1 c. orange juice
- 1 tsp. thyme
- 1 Tbsp. brown sugar
- 1/2 c. butter
- 1/4 c. butter
- 1 large onion, sliced thin
- 7 oz. can ripe olives
Directions

1Combine flour, salt, paprika and pepper. Shake the chicken in this mixture and fry lightly in the 1/2 cup butter.

2Put in pan or casserole.

3In a saucepan, mix the orange juice, thyme, brown sugar and 1/4 cup butter. Boil for 4 minutes. Slice a layer of thin onion over the chicken and the can of ripe olives, sliced. Pour sauce over all.

4Bake 1 1/2 hours at 350°.

5Add water, if dry.

6Serve with wild rice.
