  • 1 (3 lb.) boneless beef round rump roast
  • 1 can beef broth
  • 1/2 c. water
  • 6 cloves garlic, minced
  • 2 tsp. oregano
  • crushed red pepper to taste
  • black pepper to taste
  • 3 green bell peppers, sliced thinly

Directions

    Cook roast, uncovered, in 325° oven for 1 1/2 to 2 hours; do not overcook or meat will be tough.

    Chill roast at least 2 hours. Save pan juices, skimming fat.

    Combine pan

    juices, beef broth, water, garlic, oregano, red pepper and black pepper in 3-quart saucepan.

    Bring to a boil.

    Add thinly sliced roast and green peppers.
