  • 1 (1 lb.) loaf bread, cut lengthwise
  • 1 clove garlic, finely chopped
  • 1/3 c. olive oil
  • 1/4 tsp. salt
  • 1/2 c. onion, finely chopped
  • 1/4 tsp. pepper
  • 1 small tomato, finely chopped
  • 1 1/2 c. Mozzarella cheese, grated

Directions

    Mix garlic, olive oil, salt and pepper; pour over each half of bread.

    Sprinkle onion and tomato over halves; cover with cheese. Bake at 500° until edges of bread are brown and cheese melts.

    Cut in 1-inch slices.
