- 2 lb. Ricotta
- 1 lb. sour cream
- 1 lb. cream cheese
- 1 1/2 c. sugar
- 3 Tbsp. flour
- 2 Tbsp. cornstarch
- 4 eggs
- 2 tsp. vanilla
- 1/4 lb. melted butter
- 1 tsp. lemon extract (optional)
Directions

1Soften cream cheese.

2Mix all ingredients together until smooth (no lumps).

3Pour ingredients into a spring-form pan.

4Bake on 325°

5for 1 hour (may need a little longer depending on oven). Then turn off oven and leave cheesecake in oven for 1 more hour. Cool and refrigerate.
