- 2 1/2 to 3 lb. chicken
- 1 onion, diced
- 1 clove crushed garlic
- 1 (8 oz.) can tomato sauce
- 1 c. hot water
- 1/2 tsp. black pepper
- 4 oz. fresh mushrooms, sliced
- 1/2 c. white wine
Directions

1Skin chicken; remove all visible fat and cut into serving pieces.

2Place all ingredients, except mushrooms and wine, into pot over medium-high heat.

3Bring to boil.

4Cover.

5Reduce heat and simmer for 45 minutes.

6Add mushrooms and wine and simmer for 5 more minutes.

7Garnish with parsley sprigs.
