Ingredients

  • 1/2 cup olive oil
  • 1/2 pound deboned chicken breasts (cut in strips)
  • Salt to taste
  • Pepper to taste
  • Flour
  • 1/2 c fresh quartered mushrooms
  • 1 lg green pepper, sliced in strips
  • 1/2 purple onion, sliced
  • 1 tomato, chopped
  • 1-2 garlic buds, crushed
  • 1/2 tsp crushed red pepper
  • 1/2 c white wine or substitute
  • 1/2 to 1 c tomato sauce
  • 2 cup cooked penne noodles
  • Parmesan cheese

Directions

    Heat 1/2 cup olive oil.

    Add 1/2 pound deboned chicken breasts, cut in strips, salted, and peppered and lightly dusted in flour. Brown slightly.

    Then add the other ingredients one at a time in order.

    Toss over low heat for a few minutes and serve topped with grated Parmesan cheese.
