- 2 eggplant
- 1/2 c. flour
- 1/2 tsp. salt
- 1 (8 oz.) Mozzarella
- 1/2 c. Parmesan
- 1/8 tsp. pepper
- 1/4 to 1/2 c. oil
- 2 (8 oz.) tomato sauce or 1 large jar Ragu
Directions

1Cut eggplant into 1/2-inch slices and sprinkle with salt, let stand 20 minutes.

2Pat dry.

3Dip each slice in the flour, salt and pepper.

4Fry in hot oil.

5Lay on paper towel.

6Pour 1/4 of sauce in a 2-quart casserole and layer with 1/3 eggplant slices.

7Repeat eggplant, sauce and cheeses.

8Cover and bake at 400° for 20 minutes.

9Remove cover and bake 10 more minutes.
