Ingredients

  • 1 c. dried white beans
  • 2 c. brown stock
  • 6 c. water
  • 1 large onion, chopped
  • 3 large carrots, diced
  • 1 clove garlic
  • 3 stalks celery
  • 2 Tbsp. olive oil
  • 2 tsp. fresh basil
  • 1 c. macaroni (1/2 c. uncooked)
  • 1 c. tomatoes
  • 1 c. diced red skin potatoes
  • 1/4 c. white wine (optional)

Directions

    Cook beans with stock and water 1 1/2 hours or until al dente. Add all vegetables, tomatoes, olive oil, garlic and basil. Continue cooking until vegetables are soft.

    Add wine.
