Ingredients
- 2 tomatoes, sliced
- 2 medium potatoes
- 4 eggs
- 4 tbsp olive oil
- 2 clove garlic, minced
- 1 tsp dried basil
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 cup mozarella cheese
Directions

1Boil the potatoes in salted water for 10 - 15 minutes.

2Then peel and set to cool.

3Slice the tomatoes and potatoes into meduim slices.

4In a bowl, mix the seasoning.

5Rub the seasoning into the vegetables.

6In an oil drizzled pan, alternate a pototato slice then a tomato slice, in a circular motion to fill the pan.

7Cook the vegatables on medium heat for a few minutes.

8In the same bowl where you mixed the seasoning, whisk the eggs.

9Pour the eggs onto the vegetables, then let it cook on low heat for 7 -10 minutes.

10Remove from the stove, the eggs on the surface should still be runny.

11Add the cheese on top, and put under the grill to melt the cheese and continue to cook the eggs for 3 - 5 minutes.

12Perfect with fresh bread on a weekend morning, enjoy!
