  • 2 cups 1-inch cubed unpeeled maine baking potatoes (approx. 3 med.)
  • 34 cup finely chopped onion (, 1 1/2 med.)
  • 12 cup finely chopped carrot (, 1 med.)
  • 12 cup low sodium chicken broth
  • 2 tablespoons tomato paste
  • 14 teaspoon pepper
  • 2 tablespoons parsley
  • 14 teaspoon salt
  • 2 cloves garlic

Directions

    Cook all ingredients except parsley in 2 quart saucepan over medium low heat 25 to 30 minutes.
