Italian Rice Pie(Easter)

  • 3 lb. Ricotta cheese
  • 6 eggs
  • 2 c. sugar
  • cinnamon to taste
  • 1 shot Rock & Rye
  • 3/4 c. rice
  • 1 1/2 c. water

Directions

    Mix the first 5 ingredients in large bowl.

    Cook the rice in 1 1/2 cups water for 20 minutes in covered saucepan.

    Rinse with cold water; drain and add to mixture in large bowl.

    Pour into 3 (9-inch) Pyrex pie plates.

    Sprinkle a little cinnamon; bake at 350° for 40 minutes.

    For doneness, check for golden crust or bubbling mixture.
