  • 2 tsp. vegetable oil
  • 2 green onions, sliced
  • 1 garlic clove, minced
  • 1/2 c. tomato juice
  • 1/4 c. white wine
  • 1/2 tsp. dried Italian seasoning
  • 1 1/2 lb. catfish fillets
  • salt and pepper to taste
  • 1 Tbsp. chopped parsley
  • 1/3 c. yellow cornmeal
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. margarine
  • 1/4 c. freshly shredded Parmesan cheese
  • 1/8 tsp. crushed red pepper
  • 1/4 c. diced tomatoes

Directions

    Heat 2 teaspoons of oil in medium saucepan; stir in onion and garlic.

    Cook over medium heat until tender.

    Stir in tomato juice, wine, Italian seasoning and crushed red peppers.

    Simmer until reduced to a thick sauce, about 7 to 8 minutes, stirring occasionally.

    Add diced tomatoes and parsley.

    Rinse catfish.

    Pat dry with paper towels.

    Season with salt and pepper.

    Coat with cornmeal.
