- 1 medium eggplant
- 1 c. flour
- 1 c. ice water
- 1 beaten egg
- 2 Tbsp. cooking oil
- 1/2 tsp. sugar
- 1/2 tsp. salt
- grated Parmesan cheese
Directions

1Cut eggplant in half lengthwise; peel.

2Slice 1/2-inch thick. Cut slice sin 1/2-inch strips.

3Beat flour, water, egg, oil, sugar and salt.

4Dip eggplant in batter.

5Allow excess batter to drain off.

6Fry a few at a time in deep hot fat (365°) for 4 to 5 minutes.

7Drain on paper toweling.

8Sprinkle with Parmesan cheese.
