  • For the sauce
  • 1 tablespoon olive oil
  • 1 1/2 cups onions, chopped
  • 1 cup celery, cut into 1/2 inch dice
  • 1 cup carrot, cut into 1/2 inch dice
  • 3 cups tomatoes, drained and chopped (canned)
  • salt & freshly ground black pepper
  • 2 bay leaves
  • 1 cup chicken stock
  • 1 cup dry white wine
