- 2 c. extra long grain rice
- 3 c. water
- 1 large onion
- 1 tsp. paprika
- salt and pepper to taste
- 1 (15 1/2 oz.) can red shell beans
- 4 Tbsp. vegetable oil
Directions

1In a large pot, simmer onion in vegetable oil.

2Drain beans and add to pot.

3Add water, rice, salt, pepper and paprika; bring to a boil.

4Stir and cover.

5Cook over low flame for 20 minutes. Makes 4 to 6 servings.
