  • 1 c. cornmeal
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1 c. canned cream-style corn
  • 2 eggs, beaten
  • 2/3 c. buttermilk
  • 1/3 c. melted shortening or bacon drippings
  • 1 c. grated Longhorn cheese
  • 1/4 to 1/2 c. canned jalapeno peppers, drained, seeded and chopped fine

    Stir cornmeal, salt and soda together. Combine corn, eggs, buttermilk and shortening and mix with dry ingredients.
