- 5 slices bacon
- 1 1/4 c. milk
- 2 c. self-rising corn meal
- 1 (8 1/2 oz.) can cream-style corn
- 3/4 c. shredded, mild Cheddar cheese
- 2 Tbsp. chopped jalapeno peppers
- 2 eggs
- 1 tsp. sugar
- 1 c. chopped onion
Directions

1Cook bacon in a 9-inch cast-iron frying pan until crisp. Remove bacon; crumble and set aside.

2Drain and save drippings. Put 1 teaspoon back in pan and set in oven at 400° while mixing other ingredients.

3Beat eggs in large mixing bowl; stir in milk, 3 tablespoons drippings, meal and all other ingredients, including bacon chips.

4Remove the pan from oven; pour batter in pan and put a tablespoon of the bacon drippings over top.

5Bake at 400° for 35 minutes or until brown.

6If you don't want this hot, omit 1 pepper.
