Jalapeno Corn Bread

  • 5 slices bacon
  • 1 1/4 c. milk
  • 2 c. self-rising corn meal
  • 1 (8 1/2 oz.) can cream-style corn
  • 3/4 c. shredded, mild Cheddar cheese
  • 2 Tbsp. chopped jalapeno peppers
  • 2 eggs
  • 1 tsp. sugar
  • 1 c. chopped onion

Directions

    Cook bacon in a 9-inch cast-iron frying pan until crisp. Remove bacon; crumble and set aside.

    Drain and save drippings. Put 1 teaspoon back in pan and set in oven at 400° while mixing other ingredients.

    Beat eggs in large mixing bowl; stir in milk, 3 tablespoons drippings, meal and all other ingredients, including bacon chips.

    Remove the pan from oven; pour batter in pan and put a tablespoon of the bacon drippings over top.

    Bake at 400° for 35 minutes or until brown.

    If you don't want this hot, omit 1 pepper.
