Jalapeno Corn Bread

Ingredients

  • 1 c. cornmeal
  • 1 c. milk with 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. cream-style corn
  • 3 jalapeno peppers, chopped
  • 2 eggs
  • 1 c. chopped onion
  • 1/2 lb. grated cheese
  • 1/4 c. oil

Directions

    Mix all ingredients together except oil and reserve 1/2 of the cheese for topping.

    Pour oil in iron skillet.

    Heat until hot. Pour over corn meal mixture in bowl.

    Pour mixture into hot iron skillet and top with rest of cheese.

    Bake at 350° for 40 minutes. Do not turn over.

    Serve hot or cold as hors d'oeuvres or in slices with a meal.
