- 1 c. cornmeal
- 1 c. milk with 1/2 tsp. baking soda
- 1 tsp. salt
- 1 c. cream-style corn
- 3 jalapeno peppers, chopped
- 2 eggs
- 1 c. chopped onion
- 1/2 lb. grated cheese
- 1/4 c. oil
Directions

1Mix all ingredients together except oil and reserve 1/2 of the cheese for topping.

2Pour oil in iron skillet.

3Heat until hot. Pour over corn meal mixture in bowl.

4Pour mixture into hot iron skillet and top with rest of cheese.

5Bake at 350° for 40 minutes. Do not turn over.

6Serve hot or cold as hors d'oeuvres or in slices with a meal.
