- 2 c. cornmeal
- 1 c. flour
- 1 tsp. salt
- 6 tsp. baking powder
- 3 eggs, beaten
- 2 to 3 jalapenos, chopped
- 1 large onion, chopped
- 1/2 c. oil
- 1 1/2 lb. can creamed corn
- 1 1/2 c. grated Cheddar
Directions

1Combine first 4 ingredients in large bowl, mix well.

2Add eggs, jalapenos, onion, oil and corn; mix well.

3Gently fold in cheese.

4Line cupcake pan with paper liners.

5Fill 1/2 full with batter.

6Bake at 350° for 20 to 25 minutes.

7Yields approximately 2 dozen.
