  • 1 unbaked 9-inch pastry shell
  • 3 slices bacon
  • 1/2 c. chopped onion
  • 1 (17 oz.) can cream-style corn
  • 1 to 2 jalapeno peppers, chopped
  • 2 eggs, beaten
  • 1 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Directions

    Prick bottom and sides of pastry with fork.

    Bake at 400° for 3 minutes; remove from oven and gently prick.

    Bake 5 minutes more, cool.

    Cook bacon and crumble.

    Saute onion and combine with remaining ingredients, mixing well.

    Pour into pastry shell and sprinkle with bacon.

    Bake at 375° for 45 minutes or until set.
